Anyone can take an animal apart. The part that takes twenty years is knowing what a customer actually meant when they said “a couple of roasts”, and keeping one family’s order straight from the day it arrives to the day they carry it out.

That is most of the job here: reading the cut sheet properly, cutting to it, labeling clearly, and telling you straight when something on your sheet will not work the way you are picturing it.

Meat shares

Fill the freezer once, eat well all year

A share means buying an ownership interest in a live animal and then having your portion cut the way you want it. It is how you end up with a freezer full of the cuts you actually cook, rather than a box someone else packed.

One rule matters more than the rest: for custom-exempt processing the ownership has to be arranged before slaughter, while the animal is alive. Call early and it is a non-event.

Perry Butcher Co. processes beef and pork that customers already own, taking hogs whole and half hogs. Because the meat comes back to the owner rather than going to retail, it is processed under Maine's custom exemption and every package is marked not for sale.
